Mini pizzas with buffalo mozzarella cheese
Buffalo Mozzarella, sauce, and infinite possibilities of toppings make pizza one of the most popular foods around the world. Did you know that only in the United States 350 slices of pizza are eaten every second? For that reason, these mini pizzas are a must on our list of Buffalo Mozzarella Snacks.
For 8 mini pizzas – approx.
For the dough
½ tsp active dry yeast
170ml of lukewarm water
285g white spelled flour
½ tsp Himalayan pink salt
For the sauce
2 tbsp capers, rinsed and drained
1 onion, chopped
300g tomatoes, deseeded and finely chopped
1 tbsp olive oil
1 garlic clove, finely chopped
1 tbsp fresh oregano
Pinch dried chili flakes
A pizza without cheese is not a pizza. For that reason, Annabella is the best option for our snacks with buffalo mozzarella. Annabella's low moisture buffalo mozzarella has a tender texture, and it's perfectly meltable.
Some meat options: Italian sausage, bacon, chicken, ham, chorizo, beef, pepperoni, prosciutto, and shrimp.
How about some vegetables: Tomatoes, cherry tomatoes, roasted red peppers, artichokes, onions, spinach, green peppers, jalapenos, olives, mushrooms, squash, sweet corn, peas.
Other: pineapple (depending on your position on one of the biggest debates of the 20th century: is pineapple acceptable on pizza? ), basil leaves, black beans, sprouts, capers.
Preheat the oven to 400 °F.
For the dough
Mix the yeast with the water, cover and set it aside for 15 minutes.
Whisk the mixture and set aside for another 5 minutes.
Put the spelled flour and salt in a bowl, make a hole in the center and pour the mixture.
Mix on a lightly floured surface.
Knead the dough until smooth and silky to the touch. Add more flour if necessary.
For the pizza sauce
Heat the oil in a pan and fry the onion and garlic until the onions go soft, then add the other ingredients.
Simmer until thickened.
For the mini pizzas
Divide the bread dough into little pieces and flatten them into circles.
Put some tomato sauce, the low moisture buffalo mozzarella, and your favorite toppings.
Bake for 8-10 minutes, or until the mozzarella cheese is melted.
Tip: Love pizza, but searching for a low-carb option? Replace the dough with zucchini slices. Just put the zucchini slices in a greased baking sheet, and broil for 1-2 minutes per side.
Grilled cheese sandwich
On our list of Buffalo Mozzarella Snacks, we have the classic grilled cheese sandwich. If you saw the movie Chef, where Jon Favreau plays a chef who rediscovers his love for cooking, you know what we are talking about.
The movie is full of mouth-watering recipes, but this grilled cheese sandwich is outstanding. While in the movie they use white cheddar for our snack we replace it with low moisture mozzarella to make it extra special. Try it, and you will not regret it.
2 slices sourdough bread
1 slice gruyere
1 slice parmesan
1 slice of Annabella’s low moisture buffalo mozzarella
1 slice yellow cheddar
Heat a frying pan and drizzle with olive oil.
Spread one side of each bread with softened butter and place on the pan with the butter side down.
Put the gruyere, parmesan, buffalo mozzarella, and cheddar on one of the slices of bread.
Place the other slice of bread on top, toasted side up.
Brush the top of the sandwich with butter then flip the sandwich and butter the top again.
Cook until the bread is dark golden brown.
Brush the top once again with a little butter and serve.
Curious fact: If you add tomatoes, bacon, or anything other than cheese, it's no longer a grilled cheese sandwich—it's a melt. Check out in this link our recipe for a melted sandwich with low moisture buffalo mozzarella.
