The buffalo live on the equator, in the climate they were built for — out on pasture every day of the year, 100% grass-fed, fully free-range, nothing supplemented, nothing confined. It's why the milk in February is the same as the milk in July, and why it sets this thick without help.

The strawberries work the same way. In the US a strawberry is a summer thing — a few good weeks, then months of pale imitations shipped in from somewhere far away. These grow in the Colombian Andes, where there is no season: cool mountain air, year-round ripening, picked deep red all the way through, then swirled real into the yogurt itself. It's the flavor everyone thinks they know — until they taste one picked at its prime instead of its convenience.
